Sucanat is an organic, unrefined cane sugar that has not had its molasses removed, unlike refined white sugar. Light brown in color, Sucanat has a grainy texture and has a taste similar to brown sugar. It has small amounts of iron, calcium, potassium, chormium and vitamins A and C. You can use Sucanat in your muffin recipe as you would regular cane sugar, although your muffins will have a light molasses flavor.
Cream together your butter, eggs and Sucanat in a bowl. Measure the same amount of Sucanat as you would for regular cane sugar.
Mix together your dry ingredients in another bowl. Combine your creamed mixture with your dry ingredients.
Pour your batter into a greased muffin pan. Put the pan in the oven and set the temperature according to your muffin recipe.
Test your muffins by inserting a toothpick in the center of a muffin. If it comes out clean, your muffins are done.
