5 Easy Raw Vegan Recipes

When you hear the words “raw” and “vegan” together, what’s the first thing you think of? Hippies subsisting solely on lettuce and carrots? If so, you need to give these next five recipes from FullyRaw creator and blogger Kristina Carrillo-Bucaram a try. Made with loads of delicious fruits, vegetables, herbs and spices, all of these recipes are jam-packed with plenty of nutrients, such as good fats from avocados and lycopene from tomatoes. And the best part? You don’t have to be a full-on raw vegan to enjoy these recipes. Incorporate them into your diet one day (or simply one meal) a week and notice how much better your body responds to real food as opposed to processed food. For example, instead of your daily granola bar, whip up the smoothie below. Or in place of your high-sugar, processed salad dressing, try the homemade version. 1. Mango Avocado Noodle Salad

Delicious, sweet, simple and sassy, this mango avocado noodle salad recipe is sure to be one that you’ll love! And it’s easily one of my favorite recipes because it’s so easy to make. Use zucchini noodles instead of pasta to save on carbs and calories. It’s sweet and sassy, but so yummy and filling. The mango and avocado dressing is delicious, and that wonderful herbal touch of rosemary smells so good!

2. Hot-Pink Delicious Salad Dressing

Who doesn’t like a delicious salad with homemade dressing? I love this dressing because it has a wonderful consistency and sweet taste, using oranges and tomato as the base. It also incorporates rosemary and basil to calm the nerves and satisfy the senses. I usually like to eat this dressing after a big run to curb my sugar cravings and fill me up. I drizzle it all over my rainbow salads. “Dress it up” all pretty with a beautiful jar or pouring jug to make the experience even more full of beauty or to give as a gift. As for the salad itself, try the Rainbow Salad below, or mix together some of your favorite fruits and vegetables like kale, romaine, spinach, bell peppers, shaved carrots, purple cabbage, raspberries or strawberries.

3. FullyRaw Banana “Nice” Cream With Sprinkles

Everyone loves ice cream, but not everyone is so crazy about all the sugar, fat and calories. And since us vegans don’t eat dairy, I wanted to make something “nice” to replace ice cream. I love this frozen banana puree, and I love sitting by the pool during the summer with a wooden spoon in my delicious banana “nice cream.” It’s so simple to make and free of unnatural sugars, processed ingredients, animal products and chemicals—but it’s sweet for your body, mind and soul. Just put the bananas in the blender after freezing them overnight and add your berries as sprinkles.

4. Rainbow Salad With Guacamole

Yes, you can have your guac and eat it too! It’s low-fat, nutrient-rich and unbelievably delicious, especially when combined with fresh vegetables. This is my signature dish because pretty much everyone likes a little color on their plates. And what better way to incorporate all the colors of the rainbow than to eat them in a salad? It’s a great touch if you can add the guacamole in the center for a burst of green goodness (and it’s filling with all-natural fat). You can add fruit like mangoes and berries to keep your sweet tooth satisfied too. Use whichever ingredients are available and affordable that also help to make your salad colorful.
